自制阿胶的方法:
1, 买猪皮,皮越厚越好。
2, 猪皮洗净,放水中煲约二三十分钟。 刮去肥肉猪毛。猪毛本身也能出胶,刮不干净不要紧,肥肉尽量刮干净。如果肥肉不好刮,说明猪皮没煲透,否则很容易刮的。
3,用瓦煲放入猪皮,加水,至浸过猪皮,多点也行,水量和煲药一样,看灶的火力大小,时间够了水多点就喝多点。大火烧开后调到小火,煲十二个小时以上。过程中把油撇走。可在熄火前一个小时加点酒姜下去去腥。
4,趁热倒出,滤去猪皮,留汁。即得液态猪皮胶,凉后如果冻状,封好放冰箱冷藏三五天不是问题。吃时取适量热透,加入药中。味道和猪肉汤一样。
撇油时尽量撇清点,倒出来后也能撇,不要怕浪费,大不了多买点猪皮。
吃时胶的量多加点没问题,只是加多了粘口,不介意就没事。
每200克,即4两猪皮熬的胶等量于药方中的30克阿胶。
