自酿的葡萄酒变酸了有两种原因:
1,发酵时间太长,没有及时终止发酵,没有及时倒桶,俗话说叫发酵过了,酒变成了醋。
2,另一种原因是酒液被醋酸菌污染,酒液变质,变酸,这种情况是不能饮用的。
自酿葡萄酒的方法如下:
材料:新鲜的葡萄,白糖,容器。
第一步,去市场购买新鲜的葡萄,把坏掉的葡萄挑出来。

第二步,洗干净葡萄然后泡半小时淡盐水,再冲洗一遍。

:自酿葡萄酒发酸分为两种情况,
一种情况是正常的酸,即由于葡萄品种酸度高(如山葡萄、毛葡萄)或者成熟度不好,都会导致自酿葡萄酒喝起来发酸,这种情况可以通过陈酿、化学降酸等方式来降低酸度,具体方法可以参照《葡萄酒自酿手册》帝伯仕编;
第二种情况是坏掉的酸,这是由于发酵期间卫生没有做好(如果蝇进入带来醋酸菌),或者存放时空气中的杂菌进入造成葡萄酒酸败,这种情况一般都会有明显的现象,先是在葡萄酒的表面有一层灰白的薄膜,然后能够闻出刺鼻的醋酸味,如果出现这种情况,亲,基本上没有救了,或者任其继续发酵成葡萄醋(也不错哦,不过饮用前要做一些简单的处理,),或者将其蒸馏,放到橡木桶中做白兰地。希望我的回答能帮到你.
