准备材料:毛蚶600g、蒜30g、香菜20g、红辣椒2个、涝汁2匙、糖1匙、美极鲜味汁1匙、香油0.5匙、辣根0.5匙、米醋1匙
制作步骤:
1、用小毛刷将每个毛蚶刷净用清水浸泡一会儿清洗干净。

2、锅中烧开水至沸腾状态,将毛蚶摆入笊篱中放入沸水中,数25秒左右立即离开水面这时的毛蚶不但可以起到杀菌的作用也是最嫩的。

3、用螺丝刀在毛蚶的尾部轻轻撬开,用小刀轻轻的刮下一侧的肉。

4、涝汁、糖、米醋、香油、辣根、美极鲜味汁拌匀。

5、先将蒜末撒在毛蚶上。
