Huizhou Meicai (preserved vegetable) is known as a unique conventional specialty of Huizhou with a long history standing. To make the Meicai, a number of processing procedures can be used, like air-curing, handpicking and preserving. Ever since the coming of Su Dongpo, this golden-color, tasteful and temper dish was developed together with Dongpo Pork, and won its world-wide fame. It can serve as a complete dish but also as an ingredient of other dishes, like steamed pork with preserved vegetable, steamed beef with preserved vegetable and steamed fresh fish with preserved vegetable. Therefore, Meicai is now earning an increasing favor of the people from South of the Five Ridges areas, Hong Kong and Macao,and Southeast Asia. Many people, nowadays, buy the dish for not only self-consume but also for the purpose of gifting to friends and relatives.
