传统米酒的做法,也就是绍兴酒的做法。
制作方法:
1、泡米。选择较好的江米或大米,经过淘洗;用普通凉水浸泡8—10小时,沥干后备用。
2、蒸饭。将沥干的米上锅蒸至九成熟离火。要求米饭蒸到外硬内软,无夹心,疏松不糊,熟透均匀 熟后不要马上掀锅盖,在锅内把饭放至快凉时再出锅;出锅后将假打散;再摊盘晾至28℃以下人缸。
3、前期发酵。把准备好的水、培养曲和酒药倒人缸内与蒸好的米饭搅拌均匀,盖好盖,夏季置干室温下,冬天放在暖气上或火炉前,经3天左右,米饭变软变甜,用筷子搅动,即可见到有酒渗出。此时缸里的温度达到23℃左右,即可停止前期发酵。
4、压榨。将经过前期发酵的物料装入一干净的布袋中,上面压上木板、重物,榨出酒液。
5、煎酒(加热杀菌)。把压榨出的酒液放人锅内蒸(各种蒸锅均可),当锅内温度升到85度 ,即停止加热。
6、过滤。用豆包布做成一个布袋,把蒸过的酒液倒入袋中过滤,将滤液收存起来。
7、封存。把滤液装进一个干净的坛子里,用于净的牛皮纸把坛口包好,再用稻草或稻壳与上和成稀泥把坛口封严,然后把坛子放到适宜的地方,两个多月后即可开坛饮用。
