microorganisms, in particular yeast ,have been used for several thousand years for the production of beers ,wines and other ferment products 。however, it was not until 1878 that the actual components of the yeast cells responsible for the fermentation were named as enzymes 。less than two decades later the inanimate nature of enzymes was clearly demonstrated with cell free extracts of years which were able to catalyse the conversion of glucose to ethanol 。 the final demonstration that enzymes were proteins came in 1926 with the purification and crystallization of urease 。
