水蜜桃营养丰富:肉甜汁多，含丰富铁质，能增加人体血红蛋白数量，古人相传常吃桃子能“益颜色”，原因可能在此。桃子的贡献，除了桃肉能养血美颜，当中的桃仁还有活血化瘀、平喘止咳的作用。中医有一条药方，名为五仁汤，能润肠通便、活血通，成分正是桃仁、火麻仁、郁李仁、柏子仁和杏仁，对於大便燥结，肝热血瘀和闭经之人特别有帮助。需要注意的是，桃仁能活血，经量过多或行经期间不宜食用。桃树流出来的树胶也是一味妙药，既能强壮滋补，又能调节血糖水平。

桃品种依成熟期早晚分为极早熟、早熟、中熟、晚熟、极晚熟5类。果实发育期（即开花盛期至果实成熟所需天数）在80天以内的为极早熟，80～85天的为早熟，100～120天的为中熟，120～150天的为晚熟，150天以上的为极晚熟。此外，桃果依果肉色泽可分为黄肉桃和白肉桃；依用途分为鲜食品种、加工品种、兼用品种、以及供观花用的观赏桃等；依果实特征分为水蜜桃、油桃和蟠桃。
