这里面的that 可否用　which 来代替?

不能，the place后面的定语一定要用that来引导，the way也是。which一般引导非限制性定语从句。

It should be like this:
I have never been to Beijing,but it is the pleace that I want to visit most.
"That" can not be replaced by "which", you can lose "that" or use "where"
