原 料:

制作方法:
烤。豆腐切成5厘米宽、7厘米长、3厘米厚的长方块,用碱水浸泡一下,拿出放在竹篮子里,用湿布盖起发酵12小时以上。再将折耳根、苦蒜切碎,装入碗中加酱油、味精、麻油、花椒粉、煳辣椒粉、姜术、葱花拌匀成佐料待用。将发酵好的豆腐排放在专制的木炭渣铁灶上烘烤,烤至豆腐两面皮黄内嫩、松泡鼓胀后用竹片划破侧面成口,舀入拌好的佐料即成。
风味特色:
表面微黄,辣香嫩烫,开胃生津。
技术要领:
豆腐发酵时间不能过长,用手触摸有粘性感觉即可。

太细的就不说了,关键,咸水泡12小时不好掌握量,你可以在开水里放咸煮豆腐,用手摸有滑的感觉就好,咸多少煮咸少多煮一会。
鱼腥草是清热解暑的一种植物。闻着有股腥味。老人喜欢用他泡茶喝。味道微甜。如果你那里没有鱼腥草的话你找味道微甜外表差不多的代替就可以。

热心的大侠 谢谢你回复我的问题,我咸水泡12小时之后又存放12小时,结果很难闻啊,变质啦?还有,不烤用来煎行不啊?我也把变质的煎了,但是不行啊,不成形了,烂开了。真是不好弄啊。麻烦您再指点哈
你说咸水煮 那么煮之后上面滑了就立即烤吗?

现在天热,你放12小时哪肯定是变质了,可千万不要吃,吃了要进医院了。咸水煮了之后用风扇吹一下,马上会变的很干爽,摸着不滑也不粘手就可以了,这样做出来的豆腐会很劲道,不会出现你说的不成形。关键;煮豆腐的咸水要温度高,煮到摸着滑滑的时候起锅用风扇吹干冷透。希望我的话对你有帮助。
