是的that\which 都行，第一个是大的定语从句，从句中介词的宾语people带了一个自己的定语从句，。句意：我很欣慰和感激我所体验的有如此多的（对待我就像需要的一位朋友而不仅仅是一位外国人的人们的）好心（仁慈）。这样的句子很多的，如：
i know a lady who have a lot of money (which\that) she made by herself.
我认识一位独自挣了许多钱的女士
