The results show that, in addition to the starch content of germinated brown rice is lower than that of brown rice, water soluble protein, - aminobutyric acid, crude fat, ash is higher than that of brown rice; starch content in brown rice germination decreased by 27.3% ~ 29.1%, soluble protein and crude fat content increased by 23.1% ~ 25.3% and 56.2% ~ 59.1%.
