本实验针对当前国内酸奶品种较为单一、酸奶产品地方化生产的趋势,结合乳品生产和乳品市场的实际情况,研究优化菠萝果肉酸奶的加工工艺。本文以纯牛奶和菠萝果肉为主要原料,以保加利亚乳杆茵和嗜热链球茵1:1混合为发酵剂,以白砂糖为调味剂,通过单因素试验发现菠萝果肉添加量、白砂糖添加量、接种量、发酵时间等四个因素为影响菠萝果肉酸奶品质的主要因素,采用四因素三水平正交试验,确定菠萝果肉酸奶的最佳工艺参数。结果表明最佳工艺参数为接种量为6%, 加糖量为6%,果肉添加量为10%。发酵时间为4h。以此工艺制备的菠萝果肉酸奶,具有独特的风味和较高的营养价值。成品口感润滑,有菠萝香味,也有明显酸奶香味。

In this paper, YISHION milk and pineapple pulp as the main raw material, with Lactobacillus bulgaricus and thermophilus streptococcus bacteria Bacillus 1:1 mixed for fermentation agent, white sugar as flavor agent, through the single factor experiment showed that the four factors of pineapple pulp addition, white granulated sugar, amount of inoculation, fermentation time as main factors influencing the quality of pineapple flesh yogurt, using four factors and three levels orthogonal test, to determine the optimum process parameters of pineapple pulp yogurt. The results show that the optimal parameters for the inoculation amount 6%, sugar 6%, add the amount of pulp is 10%. The fermentation time was 4h. The prepared pineapple pulp yogurt, nutritional value has a unique flavor and high. The finished product taste lubrication, pineapple flavor, also has the obvious yoghourt.
