龙眼可以加工成为龙眼干。选择果大肉厚的品种,采下充分成熟的果实,去除病虫果和受伤果。放入95℃的水中烫漂2--3分钟,捞出来沥干水,进行日晒或烘焙。或者不经烫漂直接日晒或烘焙。注意经常翻果,以使各部分均匀干燥。至8成干时,剪去果梗,将果趁热堆积在一起,进行?h果,即回软,使果核内的水分转移到果肉、果皮中,达到内外均匀干燥。然后继续晒或烘,如此反复3--4次,直至锤击种核即粉碎为度。
烘焙宜用无烟的优质木炭,否则果实有烟味导致品质下降。此外,烘焙宜用文火,果粒处的温度以60℃为宜。温度过高会使果肉表面失水过快,迅速干燥结硬,影响内部水分的逸出。更有甚者,会使外壳和果肉表面炭化变黑,严重影响制品的风味品质。
