摘要:大豆分离蛋白膜通过不同的处理过程来观察膜的阻湿性。大豆分离蛋白膜的阻湿性主要有水蒸气透过系数、吸水率和水溶性,影响其阻湿性的主要因素有:搅拌时间、搅拌温度、大豆蛋白粉与增塑剂的不同比例以及成膜液的pH。实验得出,以甘油为增塑剂、搅拌时间为40min、大豆蛋白粉与甘油比为2.5:1、pH=10时,制得的膜的水蒸气透过系数最低,即膜的机械特性较好。
