一般情况下,无论是用干酵母、还是老面肥作面引子方面,其发酵时间基本上是在三小时左右(冬天稍长),如果超过这个时间后,面会因为过分发酵而起酸的,这样蒸出的馒头虽不会危及健康,但浓烈的酸味也会大倒胃口的。这种情况下,就需要用食碱去综合其酸分后再蒸馒头。效果会很好的。
当然了,若是在冰箱里、或隆冬的户外,面或许不会产生过分发酵现象,一个晚上的时间也就不会影响到第二天蒸馒头的。

可以,看到面发的跟面包似的就可以了,而且可以闻到酸味,这样蒸的时候可以搁点碱水,闻到面有一点点的甜香味就行了,那样蒸出来的馒头好吃
