摘 要
随着收入增加和食品安全意识的提高,新兴零售业业态——超市的出现,中国城市消费者有更多可供选择的购买生鲜农副产品的场所。哪些因素会影响消费者选择购买场所的行为?在各大城市政府政策的积极推动下,迅速发展起来的超市有无可能逐渐取代农贸市场和个体摊贩,成为城市居民购买生鲜农副产品的主要场所呢?超市的迅速扩张,不断扩大生鲜农产品经营范围的做法,是否有助于我国加快实现零售末端现代化的速度,确保消费者可以获得价廉质优的生鲜农产品?未来的超市是否会成为带动千万家农户走向农业现代化的龙头企业呢?这些对于消费者、零售业者和政策制定者有着密切联系的问题,至今在中国尚未有人做过富有说服力的实证研究。本文拟通过对超市的研究,北京市消费者购买蔬菜行为的调查,建立Logit选择模型对调查数据进行定量分析,来研究超市对生鲜农副产品销售的影响,以及消费者在何种的条件下才会选择超市购买生鲜农副产品。
