所用材料:财鱼,姜、料酒、盐、白胡椒、鸡精、生粉、生抽、香醋。

1、首先需要给黑鱼处理一下,在鱼头的激禅下方和鱼尾上方用刀各划一道。鱼脊背的位置用刀划下,顺着鱼骨切下鱼身一半的鱼肉。

3、取下来的鱼肉鱼皮面朝底平铺好,用刀斜切切薄片鱼头对半切开,鱼骨切小段。

4、锅中烧热油,爆香姜片,入鱼骨、鱼头部分煸炒。

5、加入沸水,放入葱、姜、盐,大火烧沸,煮15分钟,至鱼骨汤汁变白。汤煮白后放入鱼片搅拌一下即可。

6、煮至鱼汤完全开、放入盐胡椒粉,放入些葱花即可。
