那句话的字面意思是:“在伊顿的操场上打赢的滑铁卢战役!”
滑铁卢是法国的拿破仑战败的地方。
它用这句话是想说,伊顿学生比拿破仑还要利害,永远不败。这是一种精神激励。The playing fields in Eton tought a lot to her students, the spirit is unconquerable.

It's a saying by Duke of Wellington, who defeated Napoleon at the battle of waterloo. The Duke went to Eton himself.
The saying basically means, the younger generation grow from boys to men on the playing field of a great institute/learning place (The significance of school).
The rank of a school is important, and Eton is one of the top ranking school in the world.

The Duke of Wellington, the Iron Duke, Arthur Wellesley, 1769-1852,was educated in Eton College. He was the national hero, because of his series of victories over Napoleon, culminating, after Napoleon's dramatic escape from his exile on the island of Elba, with Napoleon's final defeat at the Battle of Waterloo.
The Duke of Wellington famously said "The Battle of Waterloo was won on the playing fields of Eton".
This saying is usually taken to mean that the British, under Wellington, were able to defeat the French, under Napoleon, at Waterloo, because of the discipline and ethos of organised games and sports, learned by the officers on the playing fields of Eton.
Hope it is clear enough.
